ふっくらと炊き上げた身に醤油の風味が重なり、噛むほどに豊かな旨みが広がる一品です。

Although delicate, it has a deep and satisfying taste. When cooked, the flesh becomes tender and beautifully fluffy.

It is especially delicious when simmered, as the natural umami of the fish blends into the sauce while the flavor gently soaks into the flesh.

At our restaurant, our simmered fish is prepared using only water and soy sauce.
By keeping the seasoning simple, we bring out the natural flavor of the fish without adding unnecessary ingredients.
This allows the natural umami and character of Kurumadai to shine through.
The tender flesh, combined with the delicate flavor of soy sauce, creates a dish full of rich and satisfying umami.
